Soak the dehydrated morels for at least 12 hours (overnight) in water 5 times their weight. Remove the morels carefully with a draining spoon and rinse well under cold water: they will then be ready to be cooked. Use them to prepare sauces for hot or cold dishes; they can also accompany meat, eggs and poultry.
