It's always said that caviar is best on its own. That's true. Nevertheless there are some foods that just make it still more sublime. That's certainly true of this recipe based on a combination of ingredients which complement each other perfectly.
Cut open the avocado and remove the flesh. Mix well and put aside. Beat the cream into peaks in a salad bowl (with a whisk it's really not so difficult). Using the whisk carefully blend the avocado into the cream. When ready, set out on 4 plates and add salt and pepper.
A spoon of caviar is served alongside.
