Ingredients for 4 persons

  • 8 SCALLOPS
  • 50G WHITE STURGEON SELECTION CAVIAR
  • OLIVE OIL
  • SAFFRON
  • SALT
  • PEPPER
  • 2 ENDIVES
  • CIDER VINEGAR

THE RECIPE

Prepare the scallops by cutting each one into 4 thin slices.

Mix together in a bowl the oil, saffron, pepper and salt and cover the scallops with the mixture.

Now prepare an endive salad: cut up the endives and season them with a vinaigrette (cider vinegar, olive oil and salt).

Place the scallops on the endives and sprinkle with caviar before serving.
